I've been trying to figure out what my problem is. When I wasn't taking care of two parents -- now one - who were sliding off a cliff, I was pretty good on the weekends, making more than one thing that I could toggle between. I was also good at using leftovers in the morning; my mantra was "put an egg on it," and I would do that for almost everything: leftover potatoes, rice, veggies.
But somehow as I've gotten older and tired, I can only bear to make on thing on the weekends, and -- this is weird -- can't manage to eat before I leave for work. So that means bringing breakfast to work. Fine. So I started doing overnight oats, and like everything else, I can only choke that down for about 3 days at a time.
I'm sure there's some new needle, given my age, that I need to thread. Just gotta figure out how.
